ERF Italian Meatballs

These are the best! If you are looking to impress guests for dinner or just make your family love you even more with your mad meatball skills then you must make these! They are so flavorful and great by themselves with a salad or with marinara and noodles or even as a yummy meatball sub.

The sky is the limit!!!

What you will need:

1lb ERF Ground Beef

1lb ERF Ground Pork

1lb ERF Hot or Mild Italian Sausage (out of the casing)

5-8 cloves of garlic (more is better)

2 eggs

1 1/2 - 2 cups Parmesan or Romano cheese

1/4 Cup Chopped Parsley

1 tsp Salt

1 tsp Pepper

2 1/2 cup bread crumbs

1/2 cup water

Ok roll your sleeves up, take your rings off and mix these by hand. Its worth and really the only way to get things done. Add all ingredients except bread crumbs. I would only use half of the bread crumbs at first and keep adding until the texture is right. Make sure all ingredients are mixed but try not to overwork the meat.

Roll into 2 inch balls. You can pan fry them in a large skillet in batches and then add to a sauce or just add them to a cookie sheet and bake for 35-45 minutes at 350 degrees. I prefer to bake them and I usually will put them in the refrigerator for about 20 minutes first so they firm up. I would also add parchment paper so they don’t stick.

Once they are cooked through you can serve or add to your sauce and simmer for about 20 minutes.
