Recipes from the Farm- A great clean eating SLOPPY JOE recipe
We know in this busy life we lead that feeding our families healthy meals sometimes takes a backseat. Well it doesn't have to. You have already taken the step to buy local, healthy and ethically raised meat from Emmett Ridge Farm. Now we want to help you prepare that meat quickly and easily.
This a weeknight meal we have all of the time. I usually keep an organic tomato sauce in my pantry at all times and everything else needed are pretty basic pantry items. The tomato sauce is either something we canned over the summer or canned organic variety with no sugar or salt added from the grocery.
You can serve the sloppy joes in a variety of ways. I am not a big fan of hamburger buns but if you are that would be a great way to serve. I try to limit refined carbs in the evening so I have served this over spaghetti squash, a baked sweet potato and even salad greens with some good ranch dressing on top. You could also serve on a good whole grain bread or actual spaghetti. Make it your own!
What you will need
- 1 pound of Emmett Ridge Farm Ground Beef
- 1-2 green, red or yellow peppers diced
- 2-3 cloves of garlic minced
- 1/2 tsp salt
- 1/4 tsp pepper
- 8-10 oz canned tomato sauce no salt or sugar added
- 1-1 1/2 TBS Hot Sauce (optional)
- 1Tbs Honey ( we love local of course)
- 1-11/2 Tbs Worcestershire sauce
I like to cook everything in a cast iron skillet. If you don't have one a regular skillet will do but the next time you are out BUY ONE!! They are super inexpensive and make everything taste better. They are super easy to take care of.
1. Add a bit of olive oil to skillet. Add diced bell pepper and cook for 3-4 minutes.
2. Add diced garlic. Keep stirring!! Don't walk away -garlic will burn. Cook for about 1 minute. Remove this from skillet and set aside.
3. It's time!! Add your Emmett Ridge Farm Ground Beef. Note the color and fat content. This is good ground beef.
4.Stir until no pink remains.
5. Season your ground beef to taste with salt and pepper
6. Add tomato sauce, honey, Worcestershire sauce, hot sauce, and pepper mixture.
7. Mix together and simmer until sauce thickens. I can usually only wait 5 minutes or so because hungry kids are gnawing at my legs by now.
8. Serve any way you wish! If you want it on spaghetti squash or sweet potato you should have already put those in the oven to bake.
